Hello vegan readers!


As a vegan of over 4 years I wanted to share some inspiring new recipes I've created for anyone looking to transition into a plant-based vegan diet.


Here are some recipes I discovered in the kitchen during self-isolation!


Bean Rainbow- This quick and easy salad for anyone wanting a light lunch is simple to create.


Ingredients:

  • Cucumber

  • Tomato

  • Carrots

  • Butter Beans

  • Avocado

  • Vegan quorn chicken strips

You can add sauce for a creamy texture like hummus, vegan mayo or chill sauce









Rice-flakes with salad


How to cook the rice-flakes:


Firstly, you have to soak & clean the rice-flakes with water.

Get a pan and put on olive oil inside. Add the rice-flakes to the pan. Along with spices- turmeric, red power and chill powder. Add some coriander and cropped vegetables such as peppers & sweetcorn.


Mix all the ingredients together and cover the pan for 10 mins. Check to see if the rice-flakes are soft and cooked. Then it's ready to eat.


You can add salad to the dish or flatbread.

Along with sauces of your choice.

  • Peppers

  • Coriander

  • Cucumber

  • Tomato

  • Carrots





Falafel salad


  • Cucumber

  • Tomato

  • Carrots

  • Beetroot

  • Avocado

  • Falafel patty

You can add sauce or other ingredients to your salad. You can also add salad toppers such as raisins, almond, pumpkin seeds, pine nuts etc...
